Burn ends

Rub tri-tip with smoked paprika, garlic powder, salt, and pepper

Smoke at 225°F for 2 hours until internal temp hits 135°F

Rest 10 mins, slice against the grain

Top with butter mixed with garlic, rosemary, and parsley

Pig Shots

Bake/Smoke at 375 degrees for 40 to 45 minutes or until the bacon is crispy.

Pig Skins

Place the pigskin in a smoker (indirect heat) or oven.

Cook until the internal temperature reaches 165°F (about 2 hours, depending on size).

Baste with BBQ sauce, then raise heat to 400°F and cook a few more minutes.

Serve and enjoy!

Wings

Preheat smoker/oven to 250°F. Place wings on grill grates or a cookie sheet and cook for 30 minutes.

Increase heat to 425°F and cook until wings reach 175°F internal temperature, flipping if needed for even cooking.

Remove and serve plain or toss with BBQ seasoning or hot sauce

Backyard BBQ Smash Burgers

Form loose 3oz beef balls, season with salt and pepper

Smash flat on a screaming hot cast iron pan

Cook 2 mins per side until crispy edges form

Add cheese, stack double, serve on toasted brioche bun

House Sausage & Pepper Skillet

Slice sausage into rounds, cook in cast iron until browned

Add sliced bell peppers, onions, and minced garlic

Season with Italian seasoning, salt, and pepper

Sauté together 10 mins until veggies are soft and caramelized
